Here’s a creamy garlic soup that’s smooth, cozy, and very bowl-hug-worthy.
Creamy Garlic Soup (silky & comforting)
Serves 2
Ingredients
- 1 whole head garlic, cloves peeled
- 1 tbsp butter
- 1 tbsp olive oil
- 1 small onion or shallot, sliced
- 2 tbsp flour
- 3 cups chicken or veg broth
- ½ cup cream (or milk for lighter)
- Salt & black pepper
- Optional: thyme or bay leaf
How
- In a pot, melt butter + olive oil on low. Add garlic and onion. Cook slowly until soft and fragrant—no browning.
- Sprinkle in flour, stir for 1 minute (this makes it creamy).
- Slowly add broth, stirring so it stays smooth.
- Simmer 15 minutes until everything is very soft.
- Remove herbs if used. Blend until velvety.
- Stir in cream, season well, warm gently, don’t boil.
Finish it like a dream
- Drizzle olive oil or browned butter
- Cracked pepper on top
- Croutons or toasted sourdough
- Parmesan shower 🧀
