Classic Garlic Soup (Spanish-style)

Ingredients
- 1 whole head of garlic (yes, the whole thing), thinly sliced
- 2 tbsp olive oil
- 1 tsp smoked paprika (sweet or hot)
- 4 cups chicken or vegetable broth
- Salt & black pepper, to taste
- 2 eggs (optional but traditional)
- Stale bread, torn into chunks (optional but very good)
How
- Heat olive oil on lowāmedium. Add garlic and cook slowly until soft and lightly golden (donāt rush or burn it).
- Add paprika, stir quickly (10 seconds max).
- Pour in broth, season with salt & pepper, and simmer 10ā15 minutes.
- If using bread, add it and let it soak and thicken the soup.
- For eggs: crack them straight into the simmering soup and poach, or whisk them in for egg ribbons.
- Taste, adjust seasoning, and serve hot.
